- Cut the potatoes into even fry-shaped sticks and rinse well.
- Parboil the fries in salted water for a few minutes until just tender but not falling apart, then drain and pat dry thoroughly.
- Heat oil to frying temperature and fry the parboiled potatoes until golden and crisp.
- Drain on paper towels and season with salt immediately before serving.
