Ingredients
  

  • 1 kg white flour
  • 0.5 kg chickpea flour
  • 0.5 kg breadcrumbs
  • 1 tbsp turmeric
  • 1 tbsp black pepper
  • 1/2 tbsp fennel
  • 1 tbsp citric acid lemon salt
  • 2 tbsp thyme
  • 3 tbsp coriander seeds
  • 1 tbsp dried lime ground, heaping, limoo amani
  • 3 tbsp salt
  • 3 tbsp ginger
  • 2 tbsp cornstarch or corn flour
  • 50 g garlic powder
  • 1/4 tsp cloves and nutmeg optional, each

Method
 

  1. Combine all dry ingredients thoroughly in a large bowl until evenly mixed.
  2. Store in an airtight container; use to coat chicken pieces before frying.
