Combine yeast, sugar, and a little flour in warm water; rest covered 10-15 minutes until foamy.
Stir into the flour, then add oil and salt; add a spoonful of water if too stiff.
Knead on an oiled surface for 10 minutes; rest in a covered bowl 1.5 hours until doubled.
Meanwhile prepare the filling and pizza sauce.
Divide risen dough into two unequal pieces (one larger for the base, one smaller for the top).
Roll out the larger piece and press into a greased pie dish/oven-safe pan.
Layer in the meat filling, then sausage slices, then a generous amount of mozzarella and parmesan; press down firmly.
Roll out the smaller piece as a top crust, place over the filling, and cut a few vents.
Spread pizza sauce over the top crust, sprinkle with parmesan and a little bell pepper.
Bake in a preheated 200°C (392°F) oven for 15-20 minutes.
