Migmom Crispy Battered Shrimp (خمیر بنیه و میگوی پفکی)

A crispy battered shrimp recipe that became a household favorite.

Ingredients
  

  • 1 cup white flour
  • 2/3 cup milk
  • 1/2 tsp baking powder
  • salt a little
  • 1 egg
  • 500 g shrimp
  • 4 tbsp vegetable oil plus extra for frying

Method
 

  1. Sift flour, baking powder, and salt into a bowl; make a well in the center.
  2. In another bowl, beat the egg with a little milk, then add the rest of the milk to make a smooth mixture.
  3. Pour the egg mixture into the dry ingredients along with the oil in two additions, stirring until smooth. Let the batter rest 10 minutes.
  4. Heat oil in a small pot over low-medium heat — enough for the shrimp to be fully or at least 2/3 submerged.
  5. Dip shrimp in the batter and fry until golden and crisp.
