Dough
- Dissolve yeast and sugar in warm milk; let sit until foamy.

- Knead until smooth, cover, and let rise until doubled, about 1 hour.
- Divide, shape, top with sauce and toppings of choice, and bake in a hot oven until golden.
Sauce
- Sauté the grated onion and garlic in olive oil and butter until fragrant.
- Add the grated tomato and tomato paste; cook down for a few minutes.
- Stir in nutmeg, bay leaf, mixed herbs, parmesan, salt, and pepper; simmer until thickened.
- Remove the bay leaf before using the sauce on pizza.
