Migmom Homemade Bagels

Migmom Homemade Bagels (نان بیگل)

Classic boiled-then-baked bagels, finished with a sesame topping.

Ingredients
  

  • 2 tsp sugar
  • 1 1/4 tsp instant dry yeast
  • warm water as needed
  • 200 g bread flour
  • 10 g fat preferably solid/shortening
  • 1/2 tsp salt
  • sesame seeds for topping

Method
 

  1. Dissolve sugar and yeast in warm water; let sit until foamy.
  2. Combine flour and salt, rub in the fat, then add the yeast mixture and mix to a firm dough.
  3. Knead until smooth and elastic, about 8-10 minutes.
  4. Cover and let rise until doubled, about 1 hour.
  5. Divide into equal portions, shape into balls, then poke a hole through the center of each to form a ring.
  6. Boil each bagel briefly (30-60 seconds per side) in simmering water, then drain.
  7. Top with sesame seeds and bake at 220°C (425°F) for 18-20 minutes until golden.
