Maman Khanom’s Skewer Kebab (کباب چوبی مامان خانم)
Marinated meat and vegetable skewers, a family favorite from Maman Khanom.
Ingredients
Method
- Cut the meat into uniform cubes.
- Combine puréed onion, dried lime powder, lime juice, salt, pepper, and saffron; marinate the meat in this mixture for several hours (or overnight).
- Thread the marinated meat onto skewers, alternating with small onions, bell pepper pieces, and cherry tomatoes.
- Grill over hot coals or a grill pan, turning occasionally, until cooked through and lightly charred.
- Serve hot, ideally with rice or flatbread.
