Migmom French Onion Soup

Migmom French Onion Soup (سوپ پیاز فرانسوی میگمام)

A comforting caramelized onion soup topped with melted Swiss and mozzarella cheese.

Ingredients
  

  • 30 g butter
  • 2 onions large
  • 25 g white flour
  • 1 liter water
  • 100 ml red wine or grape juice or chicken stock
  • 50 g Swiss cheese grated
  • 50 g mozzarella/pizza cheese grated
  • salt and pepper to taste
  • 1 baguette medium, sliced

Method
 

  1. Slice the onions thinly and sauté in butter over low heat until deeply caramelized, about 30-40 minutes.
  2. Sprinkle in the flour and cook 1-2 minutes, stirring constantly.
  3. Gradually add water and wine (or stock), stirring to avoid lumps. Simmer 15-20 minutes; season with salt and pepper.
  4. Ladle soup into oven-safe bowls, top with a slice of baguette and a generous layer of both cheeses.
  5. Broil until the cheese is melted and golden, then serve immediately.
