Migmom Pirashki Dough

Migmom Pirashki Dough (خمیر پیراشکی میگمام)

A yeasted pirashki dough (unlike baking-powder versions), which can be fried or oven-baked.

Ingredients
  

  • 250 g flour
  • 1/2 tbsp active dry yeast
  • 1/2 tbsp sugar
  • 1/4 cup milk
  • 1 egg small
  • 1/2 cup vegetable oil
  • 1/2 tsp salt
  • warm water as needed
  • filling of choice include pizza cheese, parsley, and thyme
  • milk and sesame seeds for topping, oven method only

Method
 

  1. Dissolve yeast and sugar in warm milk; let sit until foamy.
  2. Combine flour and salt; add the egg, oil, and yeast mixture, plus warm water as needed to form a soft dough.
  3. Knead until smooth; cover and let rise about 1 hour until doubled.
  4. Divide into portions, roll out, and fill with your chosen filling (e.g. cheese, parsley, thyme); seal edges well.
  5. Frying method: fry in hot oil until golden on both sides.
  6. Oven method: brush tops with milk, sprinkle with sesame seeds, and bake at 190°C until golden, about 20 minutes.
