Migmom Homemade Lavash Bread (نان لواش خانگی میگمام)

A thin Persian flatbread traditionally cooked on an inverted pan over an open flame.

Ingredients
  

  • 500 g flour
  • 8 g yeast
  • 5 g sugar yeast food
  • 1 tsp salt
  • 170 ml warm milk
  • 150 ml warm water
  • 70 g vegetable oil

Method
 

  1. Dissolve yeast and sugar in warm water; let sit until foamy.
  2. Combine flour and salt; add the yeast mixture, warm milk, and oil. Mix into a smooth, soft dough.
  3. Knead well, cover, and let rest 30-45 minutes.
  4. Divide into small balls and roll out each very thinly.
  5. Heat an inverted pan or griddle over an open flame until very hot.
  6. Drape each rolled-out dough over the hot surface and cook briefly until bubbled and lightly browned on both sides.
