Method
- Let the steak come fully to room temperature before cooking.
- Marinate with grated garlic, olive oil, and rosemary for at least 30 minutes.
- Pat the steak dry and season generously with salt and pepper just before cooking.
- Sear in a very hot pan with butter, basting and flipping until the desired doneness.
- Rest the steak a few minutes before slicing and serving.
